Hi Andy ... sounds really cool! It is exciting to see all of the possibilities coming together so well. In our environment, we work with Moveable Type as our blogging platform -- and more and more as our podcasting environment. We promote the use of the blogs at penn state as the place for faculty, staff, and students to host their podcasts. iTunes U can subscribe to the RSS feed from a blog and it looks to the user as if the podcasts are actually coming from that space. What it does give us is an environment that is really easy for students to use (and it is free). We've also been exploring the use of Podcast Producer as a way to let people make audio/video podcasts on the fly. All of this is coming together nicely ... when we went down the podcasting path five years or so ago, we all thought we'd be able to do this kind of stuff ... its just taken a long time.
